     Banana Bread

Ingredients
1 cup sugar
1/2 cup shortening
2 eggs (WIC food)
1 tsp vanilla
1 cup ripe bananas, mashed or 3 ripe bananas, mashed (WIC food)
2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp nutmeg
 
1/4 tsp cinnamon

Instructions
In a large mixing bowl, cream sugar and shortening. Add eggs and vanilla, beat until fluffy. Add bananas. Combine flour, baking soda, baking powder, nutmeg and cinnamon; add to banana mixture. Pour into greased and lightly floured loaf pan. Bake at 350 degrees for 45-50 minutes. Cool in pan 10 minutes, then turn onto rack to cool thoroughly.
