     Vegetable - Tuscan Style Roasted Asparagus

Ingredients
1 1/2 lbs. asparagus, trimmed
1 1/2 c. grape tomatoes, halved
3 T. pine nuts
3 T. EVOO
2 garlic cloves, minced
1 t. kosher salt
1/2 t. pepper
1 T. lemon juice
1/3 c. Parmesan cheese
 
1 t. grated lemon peel

Instructions
•Place the asparagus, tomatoes and pine nuts on a foil-lined 15-in. x 10-in. x 1-in. baking pan. Mix 2 tablespoons oil, garlic, salt and pepper; add to asparagus and toss to coat. Bake at 400° for 15-20 minutes or just until asparagus is tender. Drizzle with remaining oil and lemon juice; sprinkle with cheese and lemon peel. Toss to combine. Yield- 8 servings.
