Mix sugar, cornstarch and water in pan. Cook until thick, stirring constantly. Add egg yolks gradually and boil again. Remove from heat; add butter, then lemon juice.
I remember many happy mornings cooking in the restaurant kitchen with Aunt Louise. She would put the roast beef in the oven and then we would make apple tarts, cookies and desserts. Louise would take the potato and apple peels and the coffee grounds out to the compost pile by her garden behind the restaurant. Together we would listen to the morning talk show on the Watertown radio station and hear even more ideas for cooking and gardening. This is my favorite pie and I wrote down the recipe then.
