Grease a 9x13 pan with a bit of coconut oil. In a
food processor, process the almonds, salt, oats,
wheat germ, and ground flax seed until a fine
crumble forms. Now add in the dates and process
until crumbly again. Add the maple syrup, honey,
and melted coconut oil and add to the mixture and
process until sticky. You can add a tiny bit more
oil if the dough is too dry. Remove from
processor, reserving 3/4 cup of the mixture for
the topping. Press the rest of the mixture very
firmly and evenly into the pan. Use the bottom of
a drinking glass to pack the crust firmly.
