     Healthy tuna and kidney beans salad

Ingredients
half cup of rice or any leftover rice you have
about 4-5 cm of cucumber chopped
1 gherkin leave it out if you not fan of gherkins
1 tin or less of kidney beans
1-2 boiled eggs
mayo
olive oil
parsley or other herbs
 

Instructions
This is a very easy meal of a healthy and nutritious lunch or when you just feel a little bit peckish. You need a half of cup of boiled rice, preferably left over rice. (on tips how to quickly cook rice see the end of the recipe) Mix left over rice with diced into thin slices cucumber, kidney beans, chopped or grated hard boiled egg and the same way diced gherkin. Add some herbs you like, a pinch of salt, a bit of olive oil, mayo and mix it together. If you are not big fan of mayo or you worried about calories leave it out and have it just with olive oil, tastes just as nice.
A quick and easy way of cooking rice so it won't stick together- 1. Heat the frying pan with a bit of olive oil. 2. Put a half cup of rice and stir fry it for about 2-3 minutes. 3. Add a cup of water 4. Put the lid on and leave it for about 10 minutes. 5. Stir it, try it if it not as soft as desired add a bit more water and leave for extra 2-3 minutes.
