This is a very easy meal of a healthy and
nutritious lunch or when you just feel a little
bit peckish. You need a half of cup of boiled
rice, preferably left over rice. (on tips how to

left over rice with diced into thin slices
cucumber, kidney beans, chopped or grated hard
boiled egg and the same way diced gherkin. Add
some herbs you like, a pinch of salt, a bit of
olive oil, mayo and mix it together. If you are
not big fan of mayo or you worried about calories
leave it out and have it just with olive oil,
tastes just as nice.
