     Kale and Bean Soup

Ingredients
1 T. Olive Oil
1 Med Onion, chopped
8 Garlic cloves, minced
4 C. Kale, chopped, (1 big bunch)
4 C. Vegetable broth
2 Cans White Beans (puree 1)
1 Can diced tomatoes
S & P, hot pepper flakes, rosemary, italian seasoning
 

Instructions
Sautee' onion and garlic in oil. When soft, add kale and cook till wilted. Add 1 can of beans, and 1 can of pureed beans, broth, tomatoes and seasoning. Simmer for 1 hour.
