Brown sausage in a skillet. Drain on paper towels. Brown hash
browns, bell pepper and onion in the sausage grease. Drain on
paper towels and place hash brown mixture in the bottom of a
9x12 baking dish to form crust. Add the sausage to form the
second layer. Combine eggs, milk, cottage cheese and Swiss
cheese in a large bowl. Pour this egg mixture over the sausage.
Salt and pepper, to taste. Refrigerate overnight. Bake the next
morning in the oven preheated to 350 for 30-40 minutes.
