     Bean Soup

Ingredients
1 and 1/2 cups dry navy, great northern or lima beans, sorted and rinsed (WIC food)
7 cups water
1 medium onion
1 tsp salt
1 ham bone or 1 cup cut-up ham
 

Instructions
Put beans and water in a cooking pot. Bring to a boil and boil for 2 minutes. Remove from heat. Cover and let stand for 1 hour. Chop onion and add to beans. Cover and simmer for 1 and 1/2 to 2 and 1/2 hours or until beans are soft. Add salt. Chop ham into bite-size pieces and stir into soup. For thinner soup add more water. If use ham bone, remove the bone and cut off the meat for the soup.
Serving Suggestions
Chopped carrots and/or celery may be added during the last hour of cooking.
