     Pork Apple Bake

Ingredients
6 Pork chops, 3/4 inch thick.
2 Tbsp. Soy sauce
1/2 tsp. salt
2 Tbsp. Ketchup
1/4 tsp. pepper
2 tsp. cornstarch
1 1/2 C. Apple juice
1/4 tsp. ground ginger
2 Tbsp. brown sugar
 
1 large red apple

Instructions
In 13x9 inch baking dish, arrange pork chops in one layer. Sprinkle with salt and pepper. Bake at 350o for 1 1/4 hrs, turning pork chops once. Meanwhile, in small saucepan, combine apple juice and next 5 ingredients. Heat over medium heat to boiling and slightly thickened. Remove saucepan from heat. Core apple and cut into 6 rings. Remove dish from oven. Skim off any fat from liquid in baking dish. Place an apple ring on each chop. Pour apple juice over chops. Bake 15 minutes or until chops are fork-tender, basting occasionally with sauce in baking dish. Makes 6 servings.
Serving Suggestions
This recipe is best made with Vermont's MacIntosh orCortland apples. It is a great fall dish, easy and very suitable for entertaining.
