Cook pasta until tender. Combine mint, lemon juice, vinegar, garlic and olive oil. Stir into pasta. Add tomatoes, beans and cheese. Refrigerate until flavors are blended.
Served at Walli's this is an elegant salad, part of a major meal. We make it often as our main course. It is wonderful in the summer with fresh herbs and tomatoes.
