     RDBE Baked Salmon with Goat Cheese

Ingredients
SALMON FILETS (as many filets as you have guest)
1 TBSP LEMON JUICE
1 TBSP of MINCED GARLIC
2 TBSP of EVOO (extra virgin olive oil)
4 oz GOAT CHEESE
1 TBSP ITALIAN SEASONING
 

Instructions
Mix goat cheese with Italian seasoning (best to do the night before to let the spices mix but not necessary). Mix lemon juice, garlic and EVOO in a shallow dish and marinate salmon filets at least 30 minutes before baking. (if more than 4 fillets, then double the ingredients of the marinate) Bake salmon 12 minutes at 425 degrees. (no need to turn). Serve salmon topped with 1 tbsp of goat cheese mixture sprinkled on top of salmon.
