     Chicken Tortilla Soup

Ingredients
4 boneless skinless chicken breasts
4 oz can green chiles, drained
2 cloves of garlic, minced
1 yellow onion, diced
2 15 oz cans of diced tomatoes, including juice
1/2 to 1 c chicken broth
1 tsp cumin
Kosher salt and black pepper
2 tbsp cilantro
 
1/2 c shredded monterey jack cheese
Tortilla strips

Instructions
Place chicken in Crock pot. In separate bowl, combine chiles, garlic, onion, tomoatos, 1/2 c chicken broth and cumin. Blend and pour over chicken. Cook on high 3 hours. When chicken is tender, use the tines of 2 forks to shred. Adjust seasoning and add additional chicken broth if needed. Top with shredded cheese and tortilla strips.
