     RDBE Pumpkin Cookies

Ingredients
1/2 cup BUTTER
1/2 cup HONEY
2 EGGS
1 cups canned PUMPKIN (or pureed SQUASH)
2 t VANILLA
2 cups WHOLE WHEAT FLOUR
2 t BAKING POWDER
2 t BAKING SODA
1/2 t SALT
 
2 t NUGMEG
3 t CINNAMON
1/2 cup WALNUTS, chopped (or any other nut)
3 t ALLSPICE
2 t ORANGE RIND
1 cup RAISINS (or CHOCOLATE CHIPS)
3/4 cup UNSWEETENED APPLESAUCE

Instructions
Cream butter and honey together. Beat in eggs, pumpkin, vanilla, orange rind, and applesauce. Mix and sift flour, baking powder and baking soda, salt, nutmeg, cinnamon, and allspice. Add to creamed mixture. Mix well. Add nuts and raisins. Mix thoroughly. Drop by teaspoons onto well greased cookie sheets. Bake 15 minutes at 350 degrees or until lightly browned. Remove from cookie sheets while still warm. Cool on racks.
