     Peanut Butter Chocolate Cupcakes

Ingredients
1 1/4 cups flour
2/3 cup brown sugar
1/2 cup unsweetened cocoa powder
1/3 cup grape seed oil/vegetable oil
1 cup boiling water
2/3 cup peanut butter chips
1 tsp baking soda
1/2 tsp salt
2 tsp cider vinegar
 
1 tsp espresso powder
1/2 tsp vanilla extract

Instructions
Sift and whisk together flour, cocoa powder, espresso powder, sugar, baking soda and salt in medium bowl; set aside.
Mix water, vanilla extract, oil and apple vinegar. Slowly pour wet mixture into dry and gently stir until combined and lump free.
Fold in peanut butter chips. Fill cupcake/muffin tin each 2/3 full.
Bake at 350 degrees for 20-25 minutes. Cool for 10 minutes.

Frost with Peanut Butter Cookie Dough Frosting
