     Split Pea Soup

Ingredients
1 pkg. split peas
1 pkg. whole peas
1 pkg. knockwerst, ring metwurst or ring bologna
2 onions
salt to taste (approx. 2 tsps.)
 

Instructions
Wash and soak split peas overnite. Place split peas, green peas and salt in 4 qts. of water and bring to a boil. Cover and simmer on low heat for 2 hrs. After 2 hrs. add chopped onion to the pot. Peel the knockwerst and cut up into serving pieces making sure to prick the casing on the sausage so the meat juices (leak) into the soup flavoring the split peas. Cook over low heat for another hour. You can also use a ham or shank bone to flavor the peas instead of sausages.
