     Fire Roasted Artichoke

Ingredients
4 Artichokes
5 Large Ripe Tomatoes
1/2 Medium Yellow Onion
1/2 Bunch Green Onions
1 TBSP Olive Oil
1/2 Cup Brown Sugar
1/2 Cup Balsamic Vinegar
1/2 TSP Cumin
Salt and Pepper to Taste
 

Instructions
Artichokes- 1. Trim stem and top approximately one inch. 2. If desired, trim tip of petals with scissors. 3. Steam stem up on high using a steamer rack about 30 minutes or until base of stem is tender. Check base of stem for tenderness with fork. Cooking time will depend on artichoke size.
Grilling- Place cooked artichokes directly on grill. Turn frequently until outside petals are evenly charred.
Chutney- Cut the tomatoes in half, squeeze to remove seeds. Roughly chop the tomatoes into large dice. Add tomatoes to the rest of the ingredients (not artichokes) and simmer fro 30 minutes. Serve chutney at room temperature over the grilled artichoke.
