     Vegan breakfast burritos

Ingredients
1 tablespoon canola oil
1/2 onion, diced
1 clove minced garlic
1 large potato, peeled & diced
1/4 yellow pepper, diced
1/4 red pepper, diced
1 cup mushroom, diced
Handful of fresh herbs (cilantro, basil or parsley)
1 tomato, diced
 
Handful for fresh spinach
1/4 cup of salsa
1/2 block firm tofu
1 teaspoon turmeric
1 teaspoon cumin
Salt & pepper
Tortillas

Instructions
Fry first 8 ingredients until soft. Add rest of ingredients. Cook until mixed, hot and tasty. Spoon into warm tortillas.
