     Traditional Latkes

Ingredients
2 lbs russet (baking) or Yukon Gold potatoes
1 medium onion
1 large egg, beaten
salt and pepper
vegetable oil
 

Instructions
Peel the potatoes and put in cold water. Coarsely grate the potatoes and onion, using a grater. Place together in fine-mesh strainer or tea towel and squeeze out all water over bowl. The potato starch will settle to bottom; reserve that after you have carefully poured off the water. Mix the potato and onion with the potato starch. Add the egg, and salt and pepper. Heat a griddle or nonstick pan and coat with think film of vegetable oil. Take about 2 Tbsp of potato mixture in palm of hand and flatten. Plate on griddle, flatten with spatula, and fry for few minutes until golden. Flip to other side. Remove to paper towels to drain.
Note- Can freeze and crisp them up in 350° oven at later time
