     Rice & Spinach Balls

Ingredients
2 tsp oil
1 c thawed frozen cut-leaf spinach
1/2 small onion, diced
1/2 tsr minced garlic
1 c rice, cooked
1/4 cup parmesan, grated
1 egg, large
1/8 tsp pepper
 

Instructions
Heat oven to 350. Line baking sheet with nonstick foil. Heat oil over medium heat, add the next 3 ingredients. Cook 2 min until the spinach is tender. Stir in the next 4 ingredients. Drop rounded Tbsps onto baking sheet. Bake 20 min or until firm.
Serving Suggestions
Serve with marinara.
