Ingredients
1/2 cup minced garlic
1-2 eggplants mashed and cooked
1 small onion chopped
1 small can rotel tomatoes
1 tablespoon virgin olive oil
 

Instructions
Saute' garlic in olive oil with the onion and set aside. Mix the eggplant with the tomatoes. Add the onion mixture together
place in a bowl and chill till ready to serve
Serve with toasted pita chips and sangria
Serving Suggestions
serve with pita chips at the beginning of Mexican or Spanish night
