     Mediterranean Couscous and Lentil Salad

Ingredients 1 c. lentils 3 tbsp white wine vinegar 1 ¼ c. water 1 c. couscous ½ tsp salt ¼ c. olive oil 1 large garlic clove ½ c. chopped mint leaves 1 bunch arugula, chopped 2 c. cherry tomatoes 1 c. crumbled feta
Simmer lentils until tender, put in bowl with 1 tbsp vinegar, salt and pepper. Cook couscous, remove and cook. Add 1 tbsp oil and cool. Whisk garlic, 2 tbsp vinegar, 3 tbsp oil and salt and pepper. Stir all together and cool. Chill 3 hours or up to 24 hours. Add remaining ingredients and season with salt and pepper.
