     Curried Rice w/ Veggies and Raisins

Ingredients 1 c. basmati rice 1/8 c. coconut oil (or sunflower oil) 3 c. water ½ tsp mustard sauce 1 tsp turmeric 1 c. green peas (can add carrots, celery…) ½ c. bell pepper 1/8 c. cashews, pumpkin seeds or other ¼ c. raisins ½ tsp. sea salt 1 ½ tsp milk curry
Warm oil w/ mustard seed. Add veggies, raisins, nuts and turmeric. Mix well. Saute about 5 minutes. Wash rice, drain. Put rice in. Add remaining ingredients. Toss to coat. Saute 3-4 minutes. Add water. Bring to boil. Cover and reduce heat. Simmer until rice is cooked and water is gone.
