     Squash Soup

Ingredients
3 pounds beef shank
stewing chicken, diced
salami
1/4 cups salted pork or salted pork bellies
10 cups water
1 large onion, quartered
salt and pepper to taste
garlic and shallots
4 cloves
 
1/4 cup vinegar
pumpkin, cut in pieces or canned pumpkin if fresh is not available
cabbage, chopped
3 carrots, chopped
1 white turnip, chopped
1 leek, chopped
vermicelli and macaroni
hot pepper, optional

Instructions
Boil the first 12 ingredients until tender. Then add pumpkin and vegetables. When the vegetables are almost cooked, the pumpkin will disintegrate to give a saffron color to the soup. Add the vermicelli and macaroni. Continue cooking until al dente. Sprinkle small amount of chopped hot pepper. Serve with grilled French bread rounds.
