Preheat oven to 180 C.
Season chicken pieces and put them into a snug fitting pan in one
layer. Throw in basil, tomatoes, garlic cloves, and chill. Drizzle
with olive oil. Mix a little, pushing the tomatoes underneath.
Place in oven for 1 1/2 hours, turning halfway through cooking
time. Add beans or potatoes if using.
Squeeze garlic from skin before serving.
Serve with mash, pasta or a salad.
