     Seafood Scampi with vegetables

Ingredients
Angel Hair pasta
1 stick butter
1 T oil
1 1/2 C shrimp
1 1/2 C scallops
1/2 C scallions
1/4 C thinly sliced carrots
1 C sliced peppers
1/2 C asparagus tips
 
1/4 C sliced mushrooms
Italian seasonings
Instructions
Heat oil and butter at medium-high heat in a large frying pan while boiling the water for the pasta. To the butter, add vegetables and seafood.
Cook until seafood is done, stirring periodically. Do not overcook! Toss the vegetable mixture into the pasta. Serve immediately.
