1/2 lb brie, rind removed and diced in half-inch chunks
6 cups sweet onions, peeled and cut in half
1 tsp sugar
1 mango, peeled and diced into half-inch chunks
1/2 lb shrimp, peeled, deveined, diced into half-inch chunks
salt & pepper
1 baguette
2 tbsp olive oil
salte & pepper
2 cloves garlic
Instructions
Roast onions in saucepan with olive oil and turn
heat to low. Sprinkle in salt and sugar. Cook until
deep brown.
Season shrimp with salt and pepper and saute in pan.
In bowl, add brie and mango. Fold in warm onions and
shrimp when ready.
Slice baguette into 1/4 inch slices. Place in bowl
and drizzle with olive oil, minced garlic and
sprinkle with salt and pepper. Place on foil-lined
sheet and cook at 350 degrees for 10 minutes.
Spoon mango/shrimp/brie mixture on crostinis
