Spray muffin cups with non-stick spray.
Sauté mushrooms in butter. Add chicken and green onions. Sauté five minutes. Spoon 1 heaping teaspoon full of chicken/green onion mixture in each muffin cup.
Blend eggs, salt and cream together. Pour into muffin cups, filling them half full. Sprinkle cheese over top of egg mixture.
Bake 35 to 45 minutes at 350 degrees.
I actually mix everything together and put about two tablespoons in each muffin cup.
