     Tuscan Pasta

Ingredients
1 cup chopped broccoli
2 red bell peppers, julienned
1 large onion, chopped
1 cup mozzarella cheese, shredded
1 cup tomato sauce
2/3 lb pasta (fettuccine or penne work well)
1/3 cup parmesan cheese, grated
1 tablespoon parsley
1 tablespoon oregano
 
1 tablespoon sage
2 tablespoons olive oil
1 tablespoon salt
1/2 tablespoon pepper

Instructions
1. Mix broccoli, pepper, and onion, spread on baking sheet. Drizzle 1 Tablespoon olive oil and sprinkle seasonings overtop. Bake vegetables at 450 degrees for ten minutes.
2. Boil pasta al dente. Mix with mozzarella, vegetables and sauce, then transfer to casserole dish. Drizzle remaining olive oil on top and coat with Parmesan.
3. Bake at 450 for approximately 20 minutes
4. OM NOM NOM.
