     Chou Au Lard (White Cabbage with Bacon)

Ingredients
2/3 cup finely chopped fatty bacon
2 Tablespoons red wine vinegar
1 white cabbage, cored and shredded
salt
freshly ground black pepper
 

Instructions
Put the bacon in a heavy pan and cook over moderate heat until the fat runs. Remove from the heat and add the wine vinegar. Add the cabbage to the pan with salt and pepper to taste. Fry over high heat for 3 to 4 minutes, shaking the pan vigorously to mix the ingredients together. Serve immediately.
