     Terung Assam Prawn Soup (Sour Brinjal Prawn Soup)

Ingredients
1/2 kg prawn
1 tsp salt
1 tsp anchovies granules
4 tsp tamarind paste and ½ cup water (mixed and strained )
4 tsp curry paste
¼ turmeric powder
3 cups water
3 tsp cooking oil
1 round brinjal (Dayak Brinjal aka Sour Brinjal – see picture), cut into wedges
 
8 shallots, sliced
2 green chilies, sliced lengthwise
5 cloves garlics, chopped
2 stalks lemongrass
2 sprigs curry leafs
Salt to taste

Instructions
This recipe is originated from my home country in Kuching, East Malaysia. 1. Marinate prawn with salt, anchovies granules and turmeric paste. Set aside. 2. Heat oil in a pan, fry curry paste, chopped garlic, and curry leafs until fragrant. 3. Add 3 cups of water. 4. Add brinjals and bring to boil. 5. Put in ½kg prawns, 1 tsp salt & 1 tsp anchovies granules. 6. Served once prawns are cooked.
