2 teaspoons cinnamon (I prefer a lot of cinnamon, so I add in probably 4-6 teaspoons)
1 teaspoon salt
4 eggs
1 ½ cups vegetable oil
3 cups steamed and mashed carrots
Optional-raisins or pecans
1 ½ stick unsalted butter, softened
1 ½ packages (blocks) cream cheese, softened
6 cups (more or less, I add in 4, taste then add until my preferred taste) powdered sugar
2 teaspoons vanilla
4-6 ounces white chocolate chips
2 tablespoons heavy cream
Instructions
I enjoy baking and have made these recipes and adjusted them to my liking.
For Cake-
Pre-heat oven to 350.
Combine flour, sugar, baking soda, cinnamon and salt in one mixing bowl.
Combine eggs, vegetable oil and carrots in another bowl.
Pour wet ingredients into the dry and mix until well combined. Add pecans or raisins if you like.
Bake for 30-40 minutes, or until a toothpick comes out clean.
Let cool and then frost.
For Frosting-
Beat butter and cream cheese together until smooth.
Melt white chocolate in microwave or on stovetop in a double boiler.
Add white chocolate, heavy cream and vanilla to cream cheese and butter, beat.
Slowly add powdered sugar and taste until your desired sweetness achieved.
