Boil water with the sugar and salt. Add all the
herbs. Bring to quick boil then cool. Put Beef in a
bag with the cooled brine and leave in the fridge
for at least 3 days. Turning the meat around once a
day.
Rinse and pat dry. Rub with lots of black pepper,
some brown sugar and mustard powder. Make a bag out
of double lined foil and put the beef in, sealing
tight. Put in a 150C oven for 4 hours.
Leave to cool. Slice againts grain and make a
sandwich
