     Lemon Linguine

Ingredients
2 lbs linguine
2 egg yolks
2/3 cups heavy cream
1/2 cup freshly grated parmesan cheese
zest of 1 lemon
juice of 1/2 lemon, plus more, if needed
pinch of salt
fresh black pepper
4 T unsalted butter
 
2 T chopped parsley

Instructions
In a large pot, start water to boil. Once boiling, add pasta. While pasta is cooking, start on sauce.
In a bowl, add egg yolks, cream, cheese, zest & lemon juice, salt and pepper. Beat with a fork. You don't want it fluffy, just combined.
As soon as the pasta is ready, remove about a cup of water and set aside. Drain pasta and turn off heat. Place it back into pot and toss in butter. Stir until it's melted.
When you are sure the pasta is covered with the melted butter, stir in the egg mixture. You may need to add a little of the cooking water if it looks a litte dry. Only a tablespoon at a time. You don't want this runny. Sprinkle with parsley nad serve NOW!
