Wash kale and allow water droplets to remain on
leaves. Heat olive oil in skillet over medium heat
and add garlic. Then add red pepper and season with
salt and pepper. Saute for 2 minutes.
Next add kale and stir briefly. Cover pan with lid
and turn heat to low. Cook for 2 minutes, then
stir.
Cover again, turn off heat, and allow veggies to
steam for 2 minutes.
Serve after stirring in toasted pine nuts.
