     mashed potatoes and cream cheese

Ingredients
2-1/2 pounds small red potatoes or gold yukon potatoes
1/2 cup half-and-half,or whole milk
8 ounces plain cream cheese cut into peices
10 chives
or 2 scallions, chopped or snipped with kitchen siscisors
salt and freshly ground pepper, for taste
 

Instructions
Place potatoes in a pot of water over high heat and boil until potatoes are tender, about 15 minutes. Drain potatoes and return them to the pot to let them dry out a bit. Mash potatoes with half-and-half, or whole milk using a potato masher. Add cream cheese and smash until the cheese melts into the potatoes some, then add chives or scallions and season with salt and pepper.
