1. Pre heat oven to 400 degrees fahrenheit
2. Wash and dry the potatoes
3. xchop them into 1 inch peices, keeping the chunks roughly the same size even if they arent the same shape.
4.Out the potatoes in a meduim pot, cover with cold water, and bring to a boil.
5.Season water with 2 teaspoons of salt.
6.Once the water begins to boil, cook the potatoes for 3 to 4 minutes unil you can stick a fork into them without much resistance.
7.You want the potatoes to be almost, but not fully, cooked through so they won't fall apart during the next steps.
8. Drin the potatoes and put them in a large bowl.
9. Add rosemary, olive oil, 1/2 teaspoon of salt, and a few grinds of pepper and toss until potatoes are evenly coated.
10. Cut the strips of bacon into 3rds.
11. Wrap each potato bite in a piece of bacon, securing it with a toothpick.
12. Put the potatoes on a baking sheet lined with parchment papper or aluminum foil spaced an inched or two apart.

13. You may need to put the potatoes in two baches.
14. Cook the potatoes for 15 minutes, then flip each piece.
15. Cook for another 15 to 20 minutes, until the bacon is cooked through and as crisp as you like it.
16. Season with salt and pepper.
17. Pile the potato bites on a plate and serve!
