Place soaked beans into a very large pot and fill with enough water to cover about 1 inch. Bring to boil, then simmer over low heat for 30 minutes. Drain. Add the ham bone, ham, onion,celery, carrots, tomatoes, and vegetable broth. Season with all spices and flavorings except salt. Add chicken broth to cover all ingredients. Simmer on low heat, stirring occasionally for about 4 hours. (can crock pot.) Add more chicken broth as needed through the day. Remove ham bone and season with salt if needed. Simmer another 30 minutes. Remove bay leaves.
