     Mexican Tater Tot Hotdish

Ingredients
1 lb Ground Turkey or Hamburger
1 sm Onion (diced)
1 Garlic Clove (minced)
1 Sm can Black Olives (sliced)
1 (1oz) package Taco Seasoning
1 (16oz) bag Frozen Corn
1 (4oz) can Green Chilis (drained)
1 (12oz) can Black Beans (drained and rinsed)
1 (16oz) bag Shredded Mexican Cheese blend
 
1 (16oz) frozen Tater Tots
1 (10.5oz) Enchilada Sauce

Instructions
Preheat oven 375 degrees, spray 9x13 pan with cooking spray Heat skillet medium high and brown onion, meat and garlic....drain off excess fat Add Taco Seasoning, chilies, corn and beans to ground beef and cook until completed heated thru
In large bowl combine meat mixture, 3/4 of the cheese and tater tots, stir well place 1/3 of enchilada sauce in bottom of cake pan add the mixture to the 9x13 pan and pat down slightly
pour remaining enchilada sauce on top of mixture bake for 40 min add remaining cheese and olives to top of mixture bake an additional 10 min to melt cheese
I would use a few less chilies but that is me -)
