     Upside Down Cobbler

Ingredients
4 sticks unsalted butter, softened
2 c. firmly packed light brown sugar
25 oz. fruit cobbler/pie filling
1 (1 lb.) box powdered sugar
6 large eggs
1 1/2 t. vanilla extract
2 c. self-rising flour
1/4 c. water
Vanilla ice cream (optional)
 

Instructions
Preheat oven to 325 degrees. Melt 1 stick butter in a 9x13 pan in the oven. Remove from oven- sprinkle brown sugar evenly over butter. Spoon fruit filling evenly over the brown sugar. Set aside
Beat remaiing butter at low speed with an electric mixer until creamy. Gradually add powdered sugar, beating until blended. Increase mixture 2-3 minutes or until light and fluffly, stopping to scrape bowl as needed. Add eggs one at a time, beating at low speed, just until blended. Add vanilla. Gradually add flour and watr; beat 1 minute. Scrape bowl; increase mixer speed to medium and beat 2 minutes. Do not overbeat. Batter will be light and smooth.
Spoon batter over fruit filling; spread gently to cover. Bake 55 to 60 minutes or until a wooden pick inserted incenter comes out clean. remove to wire rack; cool completely.
Cut into 12 (3-in.) squares. Lift each square and invert onto serving plate. Top each serving with remaining fruit filling (if any). Microwave 10 seconds on high and serve with ice cream if desired.
