     Spaghetti Squash Primavera Marinara

Ingredients
1 large spaghetti squash ( about 3 1/2 pounds)
1/4 cup sliced carrot
1/4 cup chopped onion
brocolli florets
1/4 cup chopped red pepper
1/4 cup chopped green pepper
2 teaspoons olive oil
1 cup thinly sliced yellow squash
1 cup thinly sliced zucchini
 
1 garlic clove, minced
14 1/2 ounce can crushed tomatoes or tomato sauce
1/2 frozen corn, thawed
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/8 teaspoon thyme
4 teaspoons grated parmesan cheese
2 tablespoons minced parsley

Instructions
Preheat oven to 350. Boil the spaghetti squash for 15 minutes. Heat up the tomatoes in a small pot. When squash is done, discard the seeds and use a form to remove flesh.
Saute the carrots, onions and peppers for about 5 minutes. Add the zucchini and squash and saute for a few minutes more, then add the garlic and spices.
Add some of the marinara to the pan and then the squash. Put inside the empty squash halves, top with marinara and parmesan cheese.
Bake for about 20 minutes at 350.
