2 C half & half milk plus 1 C milk (or 3 C half & half)
4 2/3 C bisquick
1 1/2 C water
1/2 C frozen peas
Instructions
In large deep pan, melt butter over low heat, add onion, carrot and celery, saute without browning for about 10 min until onion translucent. Add chicken, thyme, poultry seasoning, saute another 10 min until chicken about done. Do not brown. Add potatoes and broth, simmer 10-15 min until potatoes tender.
In med bowl, whisk flour into milks until smooth. Add mixture to summering stew and stir. Bring to simmer and cook about 10 min until thickened and veg. tender.
DUMPLINGS While stew simmering, combine baking mix and water. Stir just until stiff batter forms. Set water to boil in large pot. Lay wire rack over boiling water, line with wax paper, scoop dumplings with ice cream scoop onto wax paper, cover with lid and steam 10 min.
When stew thick, add peas and salt and pepper to taste. Heat thru. This is an easy one to make earlier in the day, and heat up and make dumplings when ready to serve.
