     Beef Brisket

Ingredients
4 to 5 pound rolled, tied beef brisket
4 to 5 garlic cloves, chopped
handful of fresh thyme sprigs
3 tablespoons olive oil
2 pounds potatoes, peeled and cut into chunks
1 pound onions, peeled and cut into chunks
 

Instructions
Preheat oven to 400. Put brisket in a large roasting pan. Massage the oil into the meat. Tuck the garlic and thyme inside, under and on top of brisket. Season well with salt and pepper. Place in the oven for 30 minutes, then remove. Cover with foil and return to oven at 300 for about 4 hours. Add the potatoes and onions and baste everything. Return to the oven at 350, uncovered, for about an hour. Baste regularly.
