     CHEESE SOUP

Ingredients
4 T. butter or oil
4 small potatoes, cut into 1 inch chunks
2 lg. carrots or 10 baby carrots, chopped
1 stalk celery, chopped
1 medium onion, finely chopped
2 c. chicken broth
16 oz. Rigatoni noodles
˝ c. flour
1 c. milk
 
10 oz. Velveeta or shredded cheddar cheese
Salt and pepper

Instructions
Cook noodles according to package. While noodles are cooking, sauté onions, carrots, celery, & potatoes in butter until onions are translucent & potatoes are softened, add salt and pepper to taste. Stir flour into chicken broth, then add mixture to vegetables in a large pot at medium low heat. Once sauce thickens, add milk and continue to stir until it thickens again. Add cheese until melted. Add noodles and serve.
