     Jo's Whole Wheat Pancakes

1 1/4c oats
1 1/4c skim milk
1 large egg
1 TBSP canola oil
1 c whole wheat baking flour
1 t low-sodium baking powder

Mix milk and oatmeal, let sit for 5 minutes. Add egg and oil, stir well. Add flour and baking powder. Pour by 1/4c onto a hot griddle, cook until golden brown and flip to cook other side. I added cinnamon and no-sugar added applesauce to give them a little more flavor, I think I'll try pumpkin pie spice and pumpkin puree in my next batch.
