Saute an entire bag with a bit of oil, garlic, half a chopped red onion, mushrooms and a diced red pepper. Then I put it in the refrigerator & use it in different dishes all week! It's fast, delicious & nutritious! In fact, one serving (about 4 cups raw) contains 160 % of you daily value of beta carotene, a powerful antioxidant. And there are only 10 calories per cup.
