     Pumpkin Biscuits

Ingredients
2 1/2 c. flour
3 T. packed brown sugar
1 T. baking powder
1/2 t. salt
1/4 t. ground nutmeg
1/4 t. ground cinnamon
1/4 t. ground ginger
1/2 c. (1 stick) unsalted butter, cut into pieces
2 c. canned pumpkin puree
 

Instructions
Preheat oven to 425 degrees. Coat lg. baking sheet with nonstick cooking spray or line with parchment paper. Whisk together flour, brown sugar, baking powder, salt, nutmeg, cinnamon & ginger in a lg. bowl. Cut in butter with a pastry blender (or two knives used scissor-fashion) until the mixture resembles coarse crumbs. Stir in the pumpkin puree and mix to form a soft dough.
On a lightly floured surface, pat the dough out to a 1/2-in. thickness. cut out biscuits with a round 2-in. cutter. Transfer biscuits to the prepared cookie sheet.
Bake for 15 to 20 min., until golden. Serve warm from the oven.
