Heat olive oil over medium-high heat.
Add chops, brown on both sides (3 min/side).
Add salt and pepper.
Reduce heat to low, spoon jam/mustard mix over chops.
Cover and cook on slow simmer 20 min (test at 15), turning
every 5 min.
Remove chops and cover with tin foil.
Bring heat to high, add balsamic vinegar, stirring constantly.
Reduce sauce to a thicker consistency of rich gravy.
Pour over chops and serve.
