1.In a large bowl, combine the flours, salt, and
nutmeg. Make a well in the center.
2.In a small bowl, whisk together the milk, water,
and egg. Pour the milk mixture into the well in
the flour mixture. Gradually whisk the flour into
the liquid to form a smooth, thick dough. Let the
dough rest for about 10 minutes.
3.Meanwhile, bring a large pot of salted water to
a boil over high heat. Reduce the heat to a
simmer.
4.Using a large, flat metal spoon, press the
spaetzle dough through the large holes of a
colander (not a sieve) or a spaetzle-maker into
the simmering water to form little odd-shaped
dumplings. Do not overcrowd the pot. Cook until
the dumplings rise to the surface, 3 to 4 minutes.
5. With a slotted spoon, transfer the spaetzle to
a large bowl, toss with the melted butter, and
sprinkle with chopped parsley, if desired. Serve
immediately.
