     Quinoa Tabbouleh

Ingredients
1 1/4 cups Quinoa (or Couscous), cooked and cooled to room temperature
lemon zest
juice of 1 lemon
2 roma tomatoes, diced
1/2 cucumber, diced
1 cups cooked chickpeas
4 green onions, thinly sliced
1/2 cup chopped parsley
2 tablespoons chopped mint
 
salt and black pepper

Instructions
1. Combine! Makes a large batch- you'll have leftovers.
