     Mashed Sweet Potatoes

Ingredients
To roast the potatoes-
2 Tbs olive oil
3 large sweet potatoes
2 pinches salt
2 pinches ground black pepper
For the mashed potatoes-
1/2 cup heavy cream
1/4 cup chicken stock
2 - 3 Tbs butter
 
1/2 tsp each salt and pepper
1/2 - 1 tsp hot sauce
1/2 - 1 tsp minced garlic (optional)

Instructions
Preheat oven to 350 degrees. Coat the bottom of a baking sheet with olive oil, just enough to coat. Rub the sweet potatoes with the remaining oil and season with salt and pepper. Use a fork or pairing knife to poke a few holes in the flesh of the potatoes, then place on the baking sheet. Bake in a preheated oven for 60 minutes or until soft. Remove from oven, cut in half, and remove flesh, breaking up with a fork. To make the mashed potatoes- Warm the cream and butter in a sauce pan until simmering. Whip in the potatoes using a whisk to break up and combine. Season with garlic, salt, pepper, and hot sauce. Serve warm. Great with Pork Chops with Mustard Molasses Glaze and Apple Onion Gravy found elsewhere in this cookbook.
